And at the very heart of this culinary legend? Two remarkable souls: Gus and Ismini Dermas.
It all began with a dream—and a dash of olive oil. Gus, a young man from Mikro Horio, Greece, arrived in America with not much more than a suitcase, a relentless work ethic, and the kind of passion that can only be described as φλόγα—a flame. He met Ismini, his perfect match in life and in the kitchen, and together they stirred up something extraordinary.
They didn’t just open a restaurant—they built a home. A gathering place. A stage for joy, celebration, and the kind of meals that linger in memory long after the plates are cleared.
We, their sons, carry that torch now—με τιμή (with honor)—as stewards of this sacred space. And we don’t take a single bite of it for granted. It is because of you, our loyal guests, who’ve dined with us, brought your children, and now your children’s children, that this story continues to unfold like the most beautiful Greek scroll dipped in tzatziki.
